If these don’t apply already: do they want to get married? Have kids?

The concept of either has never entered his mind.  Maybe if the possibility of Immediate and Horrible Death wasn't around every day?  But even then, doubtful.

Would they ever consider adopting a child? Why or why not?

Probably not.  Sam's life really isn't...designed with caring for a kid in mind.  He won't hesitate to help a child out, though.  Help them find their way home, get them somewhere were folks can care for them, spare some food/meds, etc.

Do they have any prominent sensory associations? (Ex. the smell of their mother’s perfume, the sound of ice cracking under their feet as a child, etc.)

The sound of plasma spattering and sizzling on stuff tends to cause him to space out a little bit, sometimes making him think he's back in Fairfax when the Enclave came calling.  He's getting better about his aversion to energy weapons, but every so often they get to him.
